Beef by the Reef wins WA sausage title
Dunsborough butcher Beef by the Reef has been named the best sausage maker in the State, taking home three trophies in the WA Sausage King and Best Butchers Burger competitions.
The family-owned butcher presented its finest snags at the Statewide competition, run by the Australian Meat Industry Council, sizzling to the top in the Australian lamb open class category to win first prize.
Beef by the Reef owners Robert and Stacey Tan said they had had some success in the past, entering the competition nearly every year since opening the business about eight years ago.
Mr Tan said the key to creating a perfect sausage was fresh ingredients and creating the right trim.
“You’ve got to make sure it’s not too fatty,” he said. “It’s also using nice fresh flavours and a lot of love.”
The business was runner-up in the best butchers beef burger competition and placed third in the best butcher gourmet burger competition.
Mr Tan said he was proud to win.
“We’re very proud of our workers too, we couldn’t do it without them,” he said.
Beef by the Reef will travel to Melbourne in February to see how its meat measures up in the national competition.
