Dunsborough butchers Beef by the Reef has been named the best sausage makers in WA for the third time at the Australian Meat Industry Awards.

The family-owned butcher won first prize in the open-class Australian pork and Mediterranean lamb sausages and third for its barbecue sausages.

Beef by the Reef co-owner Robert Tan said his experience working with butchers over the past 15 years had given him the skills to prepare the best snags.

“We use all natural local ingredients including the skins. It’s a bit more expensive but worth it,” he said.

Mr Tan said he was proud of his staff, which included his wife Stacey, brother Gilbert and friends Connor Callow and Katrina Watson, for consistently providing a quality product.

“Hopefully, this award will attract more customers who can come to the shop to try them out and some of our other quality products,” he said.

“All of our beef and lamb is from the South West, our chicken and pigs are from Plantagenet and Mt Barker and our seafood is from Augusta, Dunsborough and Bunbury.”

His advice for cooking the State’s best sausages is to slow cook them on low heat so as to not split the skins.

After finishing second at the National Sausage King competition twice, Mr Tan said the team was hoping to take out the Australian crown in Sydney next year.
